Sulfites (allergens) are salts containing sulfite ions (SO32) and occur naturally in related plants. Sulfites are added to food products as colorants and preservatives (E numbers E150b, E150d, and E221 to E228).

This test is widely used in the food industry and in wine production. In process and boiler water, sulfite is used as an oxygen scavenger. To prevent overtreatment, this concentration must be checked regularly. The test method is also used to measure the sulfite concentration in food products treated with sulfur compounds.

The test strips consist of a 0.2 mm thick plastic strip with test paper at the bottom end. After wetting the test strip, the resulting discoloration is compared to a color scale on the box. The concentration value can be read or a concentration range can be estimated.
