This reliable test method utilizes a 'lateral flow device' (LFD), an immunochromatographic method that employs antibodies specific for the detection of gluten protein. Positive results are indicated by the presence of two lines: the test line and the control line, if gluten is present in a concentration of 5 ppm or more for raw food ingredients, processed food products, and CIP or rinse water solution, and of more than 5 g/ml per 100 cm² for surfaces. These threshold values may vary depending on the matrix. It has been demonstrated that the dynamic range of the NEOGEN Rapid Gluten Protein Set is 2.5 ppm to >100,000 ppm. The upper detection limit is not reached even when testing purely toxic grain types.
