The Bioavid Lateral Flow Mustard with included Hook Line is an immunochromatographic test for the sensitive and qualitative detection of mustard residues on surfaces (e.g. hygiene control in food production lines), during cleaning, in process water (CIP water), and in food samples. The integrated Hook Line prevents false-negative interpretation of highly positive samples.
Mustard is used as a flavoring in meat, to prepare pasta, or as an ingredient in a wide variety of sauces, soups, sausages, salad dressings, and marinades. Therefore, it is often found in food as a hidden allergen. Food producers must check for cross-contamination. There are significant shortcomings in the labeling and quality assurance of allergens, particularly for mustard. Many products that are supposed to be mustard-free are already contaminated in the field or during processing. Cross-contamination of spices with the allergen likely occurred during processing (dust formation, during crushing) or packaging. Mustard contamination is often observed in bread available in bakeries. The allergen can be present as an ingredient or as a contaminant in raw and cooked products. According to Regulation (EU) No 1169/2011, mustard and mustard products must be listed on food labels.

Sample preparation
• Surfaces (swabbing): wipe the surface with a cotton swab moistened with PBS and rinse the swab in the reaction vessel.
• Food samples: homogenize the food sample and centrifuge or filter.
• Liquid samples (e.g. CIP water): no preparation.
LOD (Limit of Detection)
• Mustard seed (in water): 1 ppm
• Spiked zero matrices: 10 - 20 ppm
• Surfaces (smears): ≤ 0.08 µg mustard/cm²
• CIP water: 1 ppm
